Two weekends ago at the Lake County Chili Cookoff, Dr. Sheller from Vale Park Animal Hospital won the coveted Golden Ladle for her chili recipe. After much prodding, she has agreed to share the winning recipe. Please enjoy!
Ingredients:
1 large diced onion
2 tbs. olive oil
1 lb. ground chuck
16 oz. can shredded beef (Troyer)
1 Lg can petite diced tomatoes
1 Sm can tomato paste
1/2 tbs minced garlic
2 sm cans black beans (drained)
2 sm cans pinto beans (drained)
1/4 c granulated sugar
1-2 tbs salt to taste
Sautee onions in olive oil. When translucent add garlic, add hamburger to mixture and brown until cooked thoroughly. Add in 1 tbs salt, tomato paste and sauté for 1—2 minutes. Next, add diced tomatoes, including the juice, add beans, sugar and canned beef. Simmer mixture for 1—3 hours, add salt to taste.
